Chicken Tikka Masala - July 8th 2016, 03:11 PM

I looooove my curries and all things spicy, so I'm sharing my chicken tikka masala. If you like spicy stuff like me, this one is for you

Ingredients:
Chicken:
1 teaspoon ground cumin
1 teaspoon ground cloves
2 teaspoons sweet smoked paprika
2 teaspoons garam masala
3 lemons
6 cloves of garlic
1 thumb size piece of ginger
6 tablespoons of natural yoghurt
4 skinless boneless chicken breast
3 fresh green or yellow chillies

Sauce:
2 onions
4 cloves of garlic
1-2 fresh red chillies
1 teaspoon fresh coriander
Olive oil
1 tablespoon ground coriander
2 tablespoon turmeric
6 tablespoon ground almond
2 cups plum tomatoes
1 chicken stock cube
2 cups light coconut milk

Method:
1. Put cloves, cumin and 1 heaped teaspoon each of paprika and garam masala into a small pan and toast to bring them back to life, then tip into a large bowl.
2. Finely grate the zest of 1 lemon, squeeze in all of its juices, crush in the garlic, ginger. Add yoghurt and 1 teaspoon of sea salt.
3. Cut the chicken breast into 5cm chunks, then massage the sauce into the chicken.
4. Skewer the chicken onto the skewer with lemon and chilli pieces inbetween. Do not squash them together. Place on a tray, cover with gladwrap and place in the fridge for at least 2 hours but best overnight.
5. For the sauce, peel the onions and garlic. Finely slice the chillies and coriander stalks (reserving the leaves for later).
6. Put it all into a large casserole pan on medium - high heat with a lug of oil and cook for around 20 minutes or until golden, stirring regularly.
7. Add the ground coriander, tumeric and remaining smoked paprika and garam masala. Cook for 2 minutes, then add the almonds. Pour in tomatoes, crumble the stock cube and add 1 1/2 cup of boiling water. Simmer for 5 minutes, then stir in coconut milk. Simmer for a final 20 minutes, stirring occasionally, then season to your taste.
8. When you're ready to cook the chicken, drizzle with a little oil, then grill on a hot barbecue, in a screaming hot griddle pan or under a hot grill, turning until it's very golden and gnarly on the sides. Slice the chicken straight of the skewer into the sauce, reserving the lemons.
9. Simmer for about 2 minutes while you use tongs to squeeze the jammy lemons over the curry to taste. Swirl through some more natural yoghurt, sprinkle with coriander leaves and serve with pappadams and basmati rice.

Tikka masala is so friggen delicious! I'm a vegetarian, so I may try the same thing with paneer instead. Thank you so much for the recipe!

I love chicken a lot, but not a lot of spicy foods. I should still give this a try sometime (maybe with less spicy stuff )

I experiment with foods from time to time, and the chicken tikka masala was one of them. I'll post one recipe once a week I'm happy that there's people that love tikka masala or spicy stuff
