Coffee Caramel Melting Moments - September 17th 2017, 01:42 PM

Fairly simple and one of my favorite biscuits to make.

The biscuits:
125g unsalted butter, softened
1/4 cup icing sugar
1 1/2 tsp coffee granules
2/3 cup plain flour
1/3 cup hazelnut meal
1/3 cup cornflour
cocoa to dust

The filling:
1/3 cup caster sugar
2 tbsp water
150ml cream
100g dark chocolate in pieces
1/4 fine sea salt

To make:
1. Preheat oven to 180. Line two baking trays with baking paper
2. In a bowl, using an electric beater, beat butter, icing sugar and coffee until pale. Fold in hazelnut meal and cornflour until combined.
3. Roll a teaspoon of mixture into balls. Set them 3cm apart. Press down slightly with a fork to flatten. Bake 12-15 minutes until golden.
4. Meanwhile, in a saucepan stir sugar and water until dissolved. Increase heat and boil not stirring for 5-6 minutes or until golden. Remove from heat, add cream. Return to low heat stir until thickened.
5. In a heatproof jug, pour caramel over chocolate with sea salt, mix until smooth. Chill until firm. Whisk until thickened.
6. Transfer into piping bag fitted with star nozzle. Sandwich biscuits together with filling. Dust with cocoa and icing sugar.

Enjoy!


You could use the same method to make caramel for something else.
