Cauliflower Indian Curry! - October 7th 2017, 11:18 PM

I'm eating the leftovers from dinner last night and why does leftovers taste heaps better than when I first ate it? Anyways! I made this simple curry last night for the family and everyone loved it except my sisters -.- It's easy to make and pretty quick to make. It took me 30 minutes roughly.

Ingredients:
2 cups of rice
1 tablespoon olive oil
2 red onion, cut into thin wedges
2 garlic cloves, crushed
1/2 cauliflower head, cut into small florets
500g potatoes, peeled and chopped roughly
400g canned chickpeas, drained and rinsed
100g spinach leaves
1 tomato, diced
1 tablespoon lemon juice
1 tablespoon korma curry paste
2 cups vegetable stock

Method:
1. Cook rice according to packet instructions.
2. Meanwhile, in a large saucepan, heat oil on a medium heat and then add red onion and garlic and cook for 2 minutes. Add curry paste and stir until fragrant.
3. Stir in cauliflower and potatoes and cook for 3-4 minutes.
4. Add vegetable stock to the saucepan along with the chickpeas and then cook for 10-20 minutes or until vegetables are tender.
5. Add spinach, tomato, and lemon juice to the saucepan and cook for a further 2 minutes.

Serve with rice, and top up with natural yoghurt.

Wow! I love curry but sadly, kitchen just isn't my place to be. I will show your recipe to my mother and hopefully she whips something out just like yours!
