This has no meat in it, just allll veggies. Can be served on top of Nachos or rice or with tortillas. I made this last night and it was delicious!
Ingredients:
1 tablespoon oil
2 garlic cloves crushed and sliced
1 brown onion finely diced
1 green capsicum diced
1 yellow capsicum diced
1 red capsicum diced
2 jalapeños deseeded and finely sliced
1 tablespoon ground cumin
2 tablespoon cayenne pepper *optional
1 tablespoon ground coriander
1 teaspoon ground cinnamon
420g tinned brown lentils drained and rinsed
420g tinned red kidney beans drained and rinsed
425g tinned diced tomatoes
3 tablespoon tomato paste
Method:
1. Heat the oil in the pot and cook the onions, garlic, chilli until soft, then add the capsicum.
2. Add the spices and cook for a further 2 minutes or until everything is fragrant.
3. Add beans, lentils, tomatoes and tomato paste.
4. Simmer for 15-20 minutes or until the sauce thickened. Season with salt and pepper.
5. Serve with rice or tortillas or nacho chips.
