Sticky Honey Cakes - February 16th 2019, 01:08 AM

Yesterday I made these dainty delicious cakes. They're called Sticky Honey Cakes. Super easy to make and very scrumptious.

Ingredients:
Salted butter 125g, softened
Soft brown sugar 75g
Runny honey 140g
2 eggs, beaten
Self raising flour 225g, sifted
Lemon juice 1 tablespoon
Ground ginger 1 teaspoon

Honey Glaze:
Salted butter 100g
Runny honey 70g
Icing sugar 125g sifted

Method:
1. Use 10g butter to grease either 2 x 12 mould bun tins or if you want larger cakes 1 x 12 cupcake tin. Heat oven to 180C/160C fan/gas 4.
2. Beat butter and brown sugar together for two minutes until it's light in colour. Add honey and beat until mixture is smooth.
3. Beat in eggs one by one, then fold in ginger and flour, finishing with lemon juice. Divide between buttered moulds and bake for twenty minutes, until risen, golden and springy in the middle. Cool on wire racks for 15 minutes.
4. To make the honey glaze, melt the butter in a small pan, remove from heat and add in honey and icing sugar, whisk using a balloon whisk until smooth. If the icing become solid, warm it through gently.
5. Dip the tops of the cake into the honey glaze or drizzle thickly with a spoon. Put iced side up on wire rack to set.
