What have you made/tried during lockdown? - October 15th 2020, 10:18 AM

What is everyone making these days while we find ourselves inside? Have you experimented with new recipes yet or tried new foods?

I have tried a lot more vegetarian meals, especially tofu, which have been really nice.

I've been doing a lot more cooking since the COVID pandemic began and because I'm not working, cooking definitely helps me save money that I would otherwise spend on food that'd run out quicker than meals I'd cook.

I've been trying new things other than the same one or two that I've done in the years past. My biggest go-to's are pasta bake dishes... mac n' cheese and baked ziti, specifically. To add a more healthy spin, I use turkey meatballs and broccoli.

I made peanut butter cookies using almond flour with my sister and a natural peanut butter. Did not taste good. New recipe required.

Since I don't have an oven, I've tried making desserts in a microwave. There are plenty of different recipes on YouTube, they mostly don't require any exotic ingredients and usually take only a few minutes to make. They're not healthy at all, but I think it's fine to eat them once in a while.

Ha, I know what you mean! This isn't necessarily because of the pandemic, but I made candy corn cookies which were a disaster. I followed the instructions but somehow candy corn melted everywhere. Then I used stuff I already had on hand to try some kind of candy bark/brittle which was gross because some of the candy I used didn't mix right.

Next time I'm just going to go with a cookie recipe on the back of an m&ms box. Or better yet, get that tub of cookie dough that is already made and use that for a while until I feel like making more from scratch.

I can definitely see how cooking at home is saving money. It's so much cheaper to cook at home rather buying takeout.

I never heard of baked ziti, google sure does show some yummy photos! It looks very delicious. I was actucally grocery shopping today and I almost picked up some ground truckey. Now, turkey meatballs sound very healthy to my lean ground beef I get.

Oh no! Have you tested out any other flours? I haven't tried almond flour, have you experiemented with the flour with other recipes?


For myself, I made pizza dough, made it into pita bread so I could use it to dip with. It turned out okay, not as what I hoped so I will need to try again. I have also tried new plant based foods which are actually yummy and packed with protein.

Winter is coming soon, I am excited to make homemade soups and sauces again.

I did a bit of baking at the start of lockdown. I made cinnamon rolls which were a hit...which meant I made them 3 or 4 times. I also made some chocolate chip short bread and low-carb/no-flour banana bread which also went down well.
