What's your dinner tonight?
 
While overnighting with Ted in his room, tonight I had a generous bowl of Pasta alla Norcina. It was delicious! So much that I asked for the recipe. Half an hour later the charge nurse arrived with this URL written on a piece of paper. https://www.greatitalianchefs.com/re...norcina-recipe

I saved it to my phone. :dem: Though the recipe uses Italian pork sausage, I reckon any decent pork banger will do. Pecorino Romano Italian cheese that was liberally sprinkled on top had a lovely fruity texture, complimenting the pasta's winey taste. Full of carbs, happy and content for finishing off with a banana, I'll be bound to sleep well in the recliner chair next to my Lovely, and wrap myself up in my warm and cosy weighted blanket.

This evening's dinner will be Roast Sausage and Fennel with Orange. Looks wonderful and, the recipe from Bon Appétit https://www.bonappetit.com/recipe/ro...el-with-orange keeps the washing up to a minimum.

I love oranges with sausages because their sharpness cuts through the richness. Cranberry sauce is another win, straight from the jar.

I'll also do some roast potatoes because they are irresistible with bangers. Everybody loves them. ;)

Eating is good for the soul. Especially during 'down' days.

My dinner tonight was a lamb rogan josh curry with rice and corriander naan bread. It was very good! I don't have the recipe to share though as my mum does things the old fashioned ways and has a stack of diabetic friendly physical cook books :nosweat:

My late mum was diabetic, too. She also lived in India with my aunty Lyra up in the north of India where Rogan Josh is a family staple because lamb was very cheap. Mum used lamb shoulder because the meat's taste was incredible. They used to have goat curry, but since you're a lover of goats it would be inappropriate to give you our recipe. :hehe:

The best Rogan Josh that comes closest to authentic Indian curry is published by Rick Stein, called Rick Stein's India. This is the recipe though be warned it's hot. https://thehappyfoodie.co.uk/recipes/lamb-rogan-josh

The guy uses Kashmiri chilli powder, 2 heaped tablespoons. But it's very very good! :bleh:

When we make ours, rice is never eaten, but bread. It would be easy making non-yeast bread to imitate naan, unless you order a takeaway naan from your local Indian takeout as it's lots easier, but making naan like chapatis is easy (once you know how ;)) But good brown bread is what we use to mop up the juices. And we also use 2 tablespoons, and they aren't level, but heaped just like Stein's.

Make your own Garam Masala. The shop-bought isn't great. Making your own is lots cheaper and its ingredients don't vary much online. My late aunt used to make her own curry spices. In fact when Lyra had to come home to go to the hospice, every day she had to sprinkle chilli flakes over her food. Brit food was just too mild after having lived in India.

I could eat curry every day it's so delicious. I'm relieved Ted loves a good curry. As soon as he's able, I'll chain him to the stove! :nosweat:

Pasta with chicken, vegetables and what I think was kind of a cheesy sauce.

Wendi and Julie have gone boat fishing so we might be lucky and have lobster salad for tonight's dinner. If not, then probably bbq mackerel. Mediterranean 'mackers' grow big here. And lemons the size of a man's fist.

Northern chicken curry (hot) with homemade pickles (cauliflower) and tomato chutney (Parveen's) with Peshwari naan, chapati, aloo gobi, mushroom bhaji and sprinkled with broken with papadum, followed by homemade vanilla ice cream topped with sweet peach chutney. :bleh:
