Vegetarian recipes - August 4th 2011, 04:31 PM

Hopefully I will be taking Food Tech A-Level in 6th form next year, grades permitting, and the course is based on vegetarian food products on the basis of it being more environmentally friendly and therefore more appealing in current times because of a greater environmental awareness. We have to find 15 recipes to make, that are skill intensive and look impressive, but I have no clue what to cook, which is odd because i'm a veggie myself, but then again, you have to do more than bunging some Quorn 'chicken' nuggets and veggies in the oven.

So, does anyone have any ideas, or does anyone have a favourite vegetarian meal that they enjoy preparing? Or even just a non-veggie meal that could be altered! Any recipes or ideas at all would be really really helpful. Each meal must include some form of protein from egg, cheese, a meat analogue or something similar ( we are allowed to use fish, but that's just as unsustainable as the meat industry at present, so I'd rather not )

My recipe for veggie soup It has so many veggies in it, you probably don't need to worry about protein.

You can do anything with gluten mock-meat that you'd do with normal meat so maybe check that out?
You can buy it in most asian stores or make your own
Stir-fry, pasta sauces, whatever

Also, Tofu is amazing and comes in many forms with different textures and flavours.

You could make chili, thats always something simple. Or check out http://www.chooseveg.com they have a TON of recipes.
