short and simple - August 19th 2011, 01:03 AM

so I was wondering if anyone here could give me some good recipes that are quick to make and fairly simple since I am still learning. I want a bit more variety of what I can eat. I know how to make a lot of basic things and as long as it comes with instructions..
Also I live alone soo I need stuff that is only enough for one person or makes good leftovers

Curry? I probably don't make it the 'proper way' I just make mild curry the easy way but still. I always freeze portions of curry seperately and then if I'm too lazy to cook more rice, I have curry on toast for lunch (this is goood).

Ingredients: (3-4 portions depending on how hungry you are and how much veg you add)
One onion, chopped
One tin of chopped tomatoes (or whole, just cut them up a bit when you put them in)
Curry paste, or curry powder if you don't have paste
Then your choice of meat if you're not veggie, and veg. I'll write the instructions for chicken curry but its completely up to you.
So for example:
2 chicken breasts, chopped into smallish pieces.
One large carrot, chopped
Small Tin sweetcorn

If you want rice to go with your curry, boil the kettle around the time the onions are done (although different brands take different times to cook sooo you may need to experiment, or to heat the rice up at the end if its done too soon).

1) Put the chopped onion in a frying pan with a little oil and fry until soft (if you're health conscious like me add a drop of water if it looks like it will burn). The onions should be soft before you put the meat in. (Add rice to a saucepan of boiling water now if you're doing so)
2) Add the meat to the pan and cook, turning the meat over until its white on all sides.
3) Add the curry paste, tinned tomatoes and carrot (any veg that take a while to cook go in here).
4) Turn down the heat a bit and stir every now and again, until some of the liquid from the tomatoes has burned off and it looks like sauce (how exact.. :P)
5) Add the sweetcorn (and any other veg that cook quickly) and heat through for a few minutes.

Drain the rice and serve! Other variations include chickpea curry, or instead of curry paste add supermarket bought fajita mix, and add in a tin of kidney beans.. endless choices :P

yum that sounds pretty good I will definitely have to try that.
