This is a recipe my mom's colleague gave us for apple brownies. They turned out SO good.
Preheat oven to 350 degrees. Combine: 1 cup soft butter 1 1/2 cup sugar 2 Eggs slightly whipped Mix those well. In a different bowl combine: 2 Cups flour 1/2 teaspoon baking soda 1 teaspoon cinnamon 4 medium apples, peeled and chopped 1 cup walnuts (OPTIONAL, we didn't use them.) Combine wet and dry ingredients and pour into a greased 8x10 pan. Bake for 30-40 minutes, or until toothpick comes out clean. They are awesome. This was the first time I baked them and they came out so good. All apply and even though there's not much cinnamon used you can taste it.
