Are you looking for soloists, or groups? Cellist Yoyo Ma is excellent. Il Divo is good, and I also like Glassworks by Philip Glass. Classical singing, Sarah Brightman is incredible, she's kind of like classical crossover, and Andrea Bocceli is great too.

Here are a few:

Apocalyptica- most of their songs are instrumental. Not quite classical (more like metal), but it's a band of celloists and a drummer

The Section Quartet- this group is really good. Entirely instrumental.
