TARTIFLETTE - December 2nd 2020, 10:17 PM

Tartiflette is the traditional dish from the French Alps. The cheese used is Reblochon, but it isn't cheap, but alway good value.

Wikipedia: https://en.wikipedia.org/wiki/Reblochon

Hvaing made several during lockdown by trial and error, I think this recipe comes up best, but instead of putting in two crushed cloves of garlic, instead rub the garlics around thge bowl. It will be more than enuogh taste for most.

'Bacon lardons': ordinary chopped fatty bacon is just as good, and, lots cheaper.

Instead of the misery 350g Reblochon, best use 500g - half a Reblochon. The 500g brings up the taste. By all means use the 350g as shown, but IMO, 500g is best!

The alcohol in the 75ml dry white wine will evaporate during cooking, leaving a distinct wine taste. When choosing a dry white, look for a nice buttery colour, don't buy cheap pale-looking plonk. You won't do your Tartiflette any good using cheap wine. But you hvae no need to buy très cher - meaning very expensive.

When the Tartiflette is ready and comes out of the oven it will be VERY HOT! So please be careful.

Bon appétit!

Tartflette is a most comforting meal on a cold Winter's day. I don't know any better meal than Tartiflette. It warms the soul. And, you will come back for more!
