I'm no epidemiologist or anything like that, but if we know the vaccine works for 12 year olds, what was stopping us from waiting like a month and sliding the age down to 11, and so on? I feel like they could've got a lot more younger people vaccinated this way.

I like your idea, but children aren't like little adults. The dose that children are getting is smaller than that of an adult, so they likely had to do clinical trials to make sure they get the dose right. Since their bodies are different they also probably wanted to study it long enough to make sure they don't have side effects. For example, you may have heard of myocarditis with the vaccine, but it was found that the risk of getting it is worse with Covid. Since children's bodies are so different than adults', it's better to be safe than sorry!
