Butternut Pumpkin, Sage and Coconut Soup - April 1st 2017, 07:19 AM

Since it's autumn, I'm all about soup and wintery feel good foods, and soup is one of my favourite meals to eat or drink or whatever C: Following the suit of my other one with the Sweet Potato and Butterbean. This is a different one, but oh so creamy! It's vegan but it's amazing!

Ingredients:
1kg butternut pumpkin, peeled, deseeded and roughly chopped
2 medium brown onions
3 cloves garlic
2 tablespoon chopped sage leaves
2 tablespoon coconut or olive oil
2 tablespoon nutritional yeast (optional)
1 litre vegetable stock
200ml coconut cream
Salt and pepper to taste

Method:
1. Roughly chop onions and garlic and cook in a large pan with olive oil & sage on a low heat until the onions are soft and translucent.
2. Add pumpkin and nutritional yeast and cook for about five minutes, stirring frequently.
3. Add stock and increase heat to a boil
4. Reduce heat and allow to simmer until pumpkin is tender (about 30 minutes)
5. Remove from heat & use a stick blender (for those who don't have a stick blender, do not fret but you can use a blender and do in batches) to blend until smooth and creamy
6. Add coconut cream and return to heat, allow to simmer for about 5 minutes until thickened slightly
7. Season with salt and pepper, serve with toasted bread!

i will try that for tomorows tea when i get home my dad always does ask so lauren do you want me to make you something or have you got your own ideas today lol

it really wasnt bad and i like garlic bread all around
im a lot younger though so might need more time to perfect on your amazing recepies
