Chocolate Mayonnaise Cake - March 22nd 2010, 11:02 PM

Anyone tried it?

I've lost the recipe to it tho

It uses mayonnaise instead of eggs ... and takes about an hour to cook in the oven ... its my favourite kind of chocolate cake!!


So much for that idea ...

I just did some googling..

Could this be it?

Ingredients

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 cups white sugar
  • 1 1/2 cups mayonnaise
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 cups water
  • 2 1/4 teaspoons baking powder
  • 1 1/2 teaspoons vanilla extract


Directions

  1. Preheat oven to 350 degrees (175 degrees C). Lightly grease two 9 inch layer pans.
  2. Mix flour, baking soda, baking powder, cocoa, and sugar into a large bowl. Stir in mayonnaise. Gradually add water and vanilla and blend until smooth. Pour batter into prepared pans.
  3. Bake at 350 degrees F (175 degrees C) for 30 minutes. Cool, remove from pans, and frost with your favorite chocolate frosting.

I totally agree it does sound like a weird combo, but I think maybe the chocolate will overpower the mayo..

I understand the mayonnaise to be more of a comonent of the completed cake than a flavoring, if that makes sense? Just like cake doesn't taste like an omelette just because it has eggs in it. Same idea. Could be wrong though.

Have baked and eaten it you can't taste the mayo at all. The best thing is that you can get eggless mayo and then make eggless cake for people who can't eat eggs ... I did it for my friends birthday with fudge icing - perfect!!

Yeah you can't taste the mayo at all ... and infact I find that the cake overall is moister than your bog standard chocolate sponge! Try the recipe and see for yourselves!

I made it last night ... it's a great recipe ... only i forgot how crumbly it is ... so for all of you who are planning on trying this ... be gentle with it ... or else you just end up with crumbs!! lol ... also - it is a very rich cake ... so don't eat lots of it at once!!
