Roast Chicken - July 12th 2011, 11:53 AM

I'm bored and slightly mental so thought I'd randomnly see if I could cook a roast chicken this week.

Any tips? I have a recipe book but wondered if anyone had any advice

Go for the best quality chicken you can afford, because you can taste the difference when you roast it. Don't overcook it, make sure you let it rest for about 15 minutes before you carve it.

This is how I do mine:
halve an onion and a lemon and stuff them inside the chicken. Finely chop some thyme and garlic and rub them on the skin. Add salt + pepper and pour a splash of white wine into the bottom of the roating tin. Put it in a pre-heated oven (200c) for about an hour and a half or until the juices run clear when you put a sharp knife into the thigh, basting every half hour.

Ella's advice is pretty much spot on for making the chicken.

About halfway through the roasting, I usually slide it out and add some extra seasoning. Because the cooking tends to blend it all together, this gives it two "layers" of seasoning. I marinade the chicken first, then add some garlic. Then, halfway through, I add some cajun spices to give it a little kick.
