Try cafepress.com - basically, you upload a PDF of the inside of your book, and then images for the front cover, spine, and back cover. You only have to order as many copies as you need. The "base price" is determined by the type of binding you select for the book, and then there is a charge per page. You also get to choose the size of your book. If you want to profit off of the book, then you can increase the price.
What I would recommend is ordering a small number of copies of book to sell at the event, and then if they sell out and more people want to order the book, have an order form where they put in their name, adress, phone number, etc., and you can order the books online and have them sent to them.
What's the book about?
