Easy Recipes for 2? - June 16th 2013, 11:20 AM

What are some easy recipes for two? My last one I made was a hit so I want another one for the boy. I did a flatbread pizza last time. I'm considering going simple and just doing a penne pasta with chicken and tomato sauce that I may or may not make homemade. Any other ideas?

Could you do Chicken Fajitas they are quite simple to do. Or the other simple one is chicken wrapped in bacon with philidelphia cream cheese. A quick google search of 'easy recipes' may also be useful.

Most recipes can be turned into something for two people if you just cut the recipe in half (on average I feel like most recipes are made to feed four people) So the options are endless. You could make burgers or you could make meatballs to go with the pasta, roasted veggies, beef or chicken stir-fry, breakfast for dinner (yum!)...or, make more than what you would both eat, then you'll be able to send the boy off to work/wherever with some yummy leftovers for lunch the next day.
It can also be fun to just google different ingredients that you have on hand, and see what you'll be able to throw together with that. It's how I've discovered some of my favorites

Great works are performed not by strength, but by perseverance.

Well, we eat a lot of pasta already and he hates veggies. We do tacos now and then too. We've done gyros but there's a shop in the city that sells them for cheap. It's hard to think of stuff.

You could do homemade baked beans http://www.deliciousmagazine.co.uk/recipes/baked-beans
they take a long time, but they're really easy to do and you can make a big batch and freeze the leftovers
pies are always good, just buy some pre-rolled sheets of puff pastry, and use them to top a pie dish full of filling
