Exclamation traybakes! - August 22nd 2014, 04:42 PM

It's almost time for me to go back to school and I've got a year of making traybakes, but I don't know any traybake recipes...

The traybake must have at least three layers and a surface decoration.

3 layers sounds like an awful lot though, too much going on there for my liking. Ater a brief glance over those recipes, there doesn't seem to be anything to matches your 3 layer criteria but I would probably take inspiration from the recipes there and make a combination recipe.

What about Millionaire Shortbread? Biscuit, caramel, chocolate. You can mix white and milk chocolate to create a marbled effect, put in smarties or something colourful, or just ice it tastefully.

i've tried that as my basic traybake but apparently it needs more detail..its a really tough brief

I was actually thinking about these tray bakes last night and I saw one that was based on a Lemon MeringuePie.

Butter/Biscuit Base
Lemony layer
Meringue layer

Plus meringue can be great to decorate, if you have patience. And can make meringue that doesn't just sink like mine

Top tip for making meringues: Cook them on a low heat for a long time. Once they're done, turn the oven off but leave them in. The cold air is what makes them sink. You're best to avoid opening the oven at all before it's completely cool, even when cooking, if possible.

On a more related note: I think the lemon meringue is a great idea, you could change the lemon to strawberry or forest fruits, or key lime if you don't like lemon.

I've just been thinking...my recipe for the base and filling of the tray bake wouldn't take very long to cook, how would I get the meringue onto it? Would I cook it separate and then just place it ontop?
