Fudge! - August 26th 2014, 09:48 PM

Hi everyone!

I tried to make fudge tonight for the first time, and it didn't really work. I did follow the recipe aside from using maybe 15 grams or so less sugar than I should have. I didn't think it'd make much difference really.
But although, aside from that, I followed the recipe to the letter, it started off more like runny toffee (very sticky) and as it's started setting it's now more like tablet than fudge.

Has anyone ever successfully made fudge before? How did you do it? What did I do wrong?

Edit: I should add that when I said it ended up as tablet, I didn't mean I baked an iPad. I meant this.

Can I just say that I'd much rather a baked, sugary iPad than a normal one?

Anyway, I haven't personally done a lot of fudge making personally, but I've watched it and listened to many not-entirely-fascinating (or at least, not after the 15th time...) anecdotes about making it from various sources. Since I doubt 15g sugar is likely to make a whole lot of difference (unless you were making it in tiny quantities), I'd suggest that the consistency might have been to do with how long it was on the heat, and how well the sugar dissolved. Tablet tends to be slightly more crystalline, so perhaps deviating from the recipe slightly in future in terms of when it's ready to come off the heat might be something to experiment with?

In saying that, grab an Irn Bru or something to eat it with, and it'll taste great, I'm sure.

There used to be a recipe on marshmallow fluff and that stuff came out great and it was super easy. You could check and see if the recipe is still there and try that?

We make fudge yearly around the Holidays. We actually melt entire bags of marshmallows (depending on how many batches we're making!) and we melt baking chips. There are a lot of websites out there that you can order specific flavored baking chips from - you should try it! If I can get the recipe I'll come back and post it here or message it to you.

I got it to the soft ball stage like the recipe instructed, put the pot into a basin of cold water, and beat the mixture. It didn't thicken up like it was supposed to, it just got more sticky and started resembling melted toffee. I literally have no clue where I went wrong.
It's finally set and it's tablet, not fudge. I've made tablet before and you need to hold it just at boiling point and stir continuously for half an hour at least, I only did that for ten minutes so seriously, how did this happen?
I'll try with a different recipe next time and see. I was drinking Irn Bru at the time so all was well.

Marshmallow fluff? I've seen it in a couple of shops here but at 3 per jar ($7ish) I'm reluctant to buy it because I find it too sickly sweet and barely touched it last time I bought some.

What are baking chips? Further down the line I might start experimenting with flavours, but I just want to try and make a simple vanilla fudge. All I used was condensed milk, sugar, butter, and vanilla essence. I think it might just have been a bad recipe, it was on some blog somewhere with no comments or anything from other people.

My mom has used this recipe for about fifteen years now! She says it's easy to follow and the fudge comes out awesome. It's easy to change things too, if you want to experiment with flavors eventually. Oh, and by baking chips I mean a bunch of chocolate chips. I'm pretty sure there are some websites that you can order different flavors from too!

Just going to copy a little from the beginning of the page:

    2 cup Nuts (walnuts, pecans, almonds, chopped -or- 8 oz.
    bag)
    1 tsp Vanilla Extract
    1 tsp Imitation Butter Flavor (optional)
