Baking Saturday! - October 3rd 2015, 11:14 AM

Today is a big baking day! It's exactly like an episode of Bake Off but all in one day instead of over 2.

The first thing I need to make is a tray of Braille Cookies. So I'll do a basic shortbread dough, maybe add a touch of vanilla for some extra flavour, and then use little edible silver balls to spell out things in Braille.
It WAS for a marketing event for National Braille Week at work, but the Scottish Parliament have now said we're not allowed to take any food with us. Marketing asked me to make them anyway so they can take pictures for the website. How exciting!

The second thing is a chocolate coconut cake. The place I work for is 2 sister charities under one roof: Royal Blind (who want the Braille cookies) and Scottish War Blinded, which this cake is for. SWB have found some recipes that wives of their blinded veterans made into a recipe books years and years ago. They've posted pictures and challenged people to bake one of the recipes, post a picture on the page, and win a Scottish War Blinded merch bag. I could probably get one if I just asked but this is A CHALLENGE ON MY HONOUR.
Seriously though the recipe is ridiculously vague. It's simple. But at one point it mentions 6oz of chocolate and just says "put on" and it doesn't specify if the cake goes on the chocolate or the chocolate goes on the cake. This step is before you actually bake the thing in the oven. I'm just going to improvise and decorate it with tempered dark chocolate and use leftover dessicated coconut to attempt put the SWB logo on top:


The last thing is for my mum. She has an important meeting on Monday and has asked me to make a cake for it. So the meeting is for her work, SPRED, so I'm making a simple victoria sponge and covering it with white fontant icing. I'll use white, black, and green icing to put the SPRED logo on top:

I'm then using writing icing to write "All Are Welcome!" underneath from this beautiful SPRED hymn.
I might even go full on Bake Off and make some royal icing to pipe round the edges!

My feet hurt so much. My jeans used to be blue and now they're white. I didn't decorate the coconut cake, it looked pretty good as it was, and it would have looked really messy because of the texture of the coconut, it'd be all uneven and annoy me.

Those braille biscuits look yummy, such a creative way!
The coconut cake looks yummy with the chocolate on the bottom.
The SPRED cake looks fantastic.

I need to bake more and I think you have inspired me to bake something for my Thanksgiving get together.

Is your floor covered in white as well? Once my shoes were nice but they had like a inch of flour on them (used to work at a pizza place) and the flour went in my socks... Looks like you had so much fun baking!

Those biscuits look absolutely amazing. The fact that there's inspiring words written in braille is so creative. Plus, the biscuits and the cake looks delicious! The designs on the cake look fantastic as well. Overall, you're a professional baker.
