Chocolates! - November 13th 2015, 10:23 PM

I post in here too often I think.

ANYWAY. Lately I've been experimenting with making chocolates. The first time I used a kind of chocolate truffle as the middle and then dipped them in melted chocolate, but it took ages because they had to set overnight before dipping them and they made a HUGE mess. Then I tried marshmallow fondant, which was great, but it was really sticky and awkward for ages until I managed to incorporate enough icing sugar for it to be workable. I finally switched to a kind of buttercream. I cream some unsalted butter and then just add in icing sugar until it tastes good. No measurements. Then I split them into different bowls so I can add different flavours, and use cake pop moulds to actually shape and put together the chocolates.
On a good day I can spend hours tempering the chocolate and everything but tonight I was tired and my back hurt so I didn't bother with that. I also didn't let them set long enough in the fridge before turning them out so my stars fell apart.
I still think they look okay.


We have white chocolate & cherry, vanilla, orange cream, coffee, and dark chocolate & mint.
I already know that the coffee and cherry are really good. Mint and vanilla are kind of staple flavours anyway. This was my first time doing orange cream but it is SO good.
I'm thinking of making some at Christmas and giving them out as extras with gifts.

These chocolates look fantastic and delicious. You did a good job. It's really nice that you're thinking of making some for others around Christmas. I bet everyone will enjoy it a lot. Do you have any other ideas in mind as far as food goes? I like to see your creativity.
