Have you thought about smoothies? Those are relatively easy to prepare and can be vegan if you add non-dairy milk or yogurt.

A smoothie is also really flexible in terms of the consistency and types of fruits you use.
Some fruits I've used in the past were banana, mango, blueberries, strawberries and peaches.
If you have a blender or juicer that would make preparing it go smoother (no pun intended :P)
If not, you can use a mixing bowl with a fork, spoon and masher.

A smoothie from what I understand is served room temperature and is liquid enough to drink. Something I've done was freeze the smoothie and eat it like in a bowl with a spoon sorta like ices.

Something I used to do when I was a kid was use these Popsicle mold containers to make Popsicle! Popsicle molds are usually plastic but you can find ones made BPA-free or alternative materials if you'd like to be more eco-friendly.

For popsicles you can buy any kind of juice or vegan drink and fill up the mold and freeze it. You can also pour the smoothie mix into the mold containers and freeze the blended fruit, nuts, seeds etc and have it as a Popsicle.

My siblings like this chocolate depression cake and you can check out this link . If you need anymore or want something specific, I can see what I can find. I will edit this when I get home because we have a bunch of recipes due to allergies.

Oh boy do I!
My favorite is banana nice cream. All you need is frozen bananas and you just pop them in a blender or food processor and then add whatever flavorings or toppings you want. There's also lots of raw vegan desserts you can try, most of them involve blending fruits together to make layered cakes or pies. There's also vegan versions of most desserts in stores, for example Daiya has a vegan cheesecake. You could also make cookie dough balls with peanut butter, vanilla extract, and cacao nibs. Vegan cookies are also easy to make, just substitute non dairy milk for regular milk, coconut oil for butter, and a banana or a chia egg for an actual egg. I recommend checking out Pinterest for ideas, I pinned a ton of recipes on there when I first went vegan and it was very helpful.
Oh and Oreos are vegan depending on your country.

This, all of this. Raw vegan is a gold mine for easy and delicious desserts. Dates and coconut go well in nearly anything and the banana ice cream thing is absolutely amazing (I've done it, myself.) I've made a lot of cheesecakes and cookies that were raw vegan that turned out very well. Google is your friend here, the more fruit and coconut the better (in my opinion!). Good luck!

Frozen berries are a healthy alternative to dessert, vegan or not! Plus they're super yummy.
