Beef and Broccoli - May 12th 2017, 01:08 PM

I made this today and oh my goodness it was amazing! You need a slow cooker to make this, and trust me. You just throw everything in it and let it cook away and when it's time to eat it, it just melts in your mouth.

Beef and Broccoli

Ingredients:
2 lbs sirloin steak or boneless beef chuck roast, in rough cubes
1 cup beef broth or stock
1/2 cup low sodium soy sauce
1/4 cup brown sugar
1 TBSP sesame oil (can use other oil if you want just not olive)
4 garlic cloves, minced
4 TBSP cornstarch
4 TBSP water
1 head of broccoli, cut into florets

Method:
1. In the crockpot, whisk together beef broth, soy sauce, brown sugar, oil and garlic
2. Place the cubed beef in the liquid and toss to coat. Cover with the lid and cook on low heat for 4 hours.
3. After 4 hours, whisk together cornstarch and water in small bowl. Pour into crockpot and stir to mix well. Add broccoli and gently stir to combine. Cover with lid and cook for 30 minutes to cook broccoli and thicken sauce.

Serve over warm rice!

* I added mushrooms and onions for extra flavour
* I also cooked for longer than 4 hours, I cooked for roughly 8 hours and it was still amazing.

I've seen a similar recipe in a video online and I've been meaning to try it for ages! I'll definitely give it a go, it sounds so yummy.

Even if I don't eat beef, this still sounds like an amazing dish! I'm looking to get a slow cooker and try out different methods, so this gives me many ideas.
