Beetroot, Feta & Thyme Tart - July 20th 2017, 03:52 PM



I made another dish the other day and it was quite good. If you like beetroot, this is a rad recipe.

This is a Beetroot, Feta and Thyme tart and it's served with salad! The beetroot is an earthy Vegetable which will make your pee pink and the feta is pretty rich in flavour but so good and it's a knockout combination! Do I have you hooked? Read on!

What you need:
Olive Oil
1 red onion
2 beetroots
1 bunch of thyme
2 tbsp of pine nuts
2 tbsp balsamic vinegar
8 sheets of filo pastry
1 block of feta cheese

Let's make it! How to make:

1. Get Prepped! Preheat the oven to 220 degrees or 200 if fan forced. Finely slice the red onion. Cut the beetroot unpeeled because the skin contains all the good stuff into half moons. Pick the thyme leaves.

2. Cook the beetroot and onion! Heat a large frying pan over a medium high heat. Add the pine nuts and toast, stirring for 3-4 minutes or until golden. Remove from the pan and set aside. Add a drizzle of olive oil to the same pan and once hot add the beetroot and onion and cook for 10 minutes or until softened. Remove the pan from the heat and stir through the balsamic vinegar. Season with salt and pepper to yo taste. Mix well and set aside.

3. Assemble the tart! While the beetroot is cooking away, lay 2 sheets of filo pastry on the oven tray lined with baking paper and brush the pastry with olive oil. Continue laying the sheets of filo on top of one another, brushing with oil between every second layer until your tart is 8 sheet high.

4. Bake the tart! Top the filo pastry with the cooked beetroot and onion, leaving a 2cm border around the edges. Crumble over feta and sprinkle over pine nuts and thyme. Fold in the edges to create a pastry border and brush with olive oil. Place the tart in the oven and bake for 10-15 minutes or until golden and crisp.

* Wear disposable gloves if you can otherwise your hands will be stained pink from the beets. Otherwise give your hands a good scrub afterwards.

I made salad in my picture and what you need is mixed salad leaves, cucumber and this simple dressing which basically has

1/2 tsp honey
2 tbsp balsamic vinegar
1/4 tsp dijon mustard
2 tbsp olive oil
salt and pepper to taste

Mix well and serve it with the salad and tart!

This sounds interesting! And I love beetroot and feta cheese so I may have to give this a go sometime. Thanks for sharing your recipe!

omg beetroot is one of the strangest but awesome veggies ever that was so this wins hands down
