Roasted Cauliflower Biryani with Currants and Roasted Almonds - August 2nd 2017, 10:06 AM

Soooo today I made this dish for dinner and can I just say, every spoonful was an explosion of flavour. The sweetness from the cauliflower, the carrots and the Greek yoghurt enhances the flavour. It's truly orgasmic

I made this for 4 people so this recipe is for a family

What you'll need:
1 whole cauliflower
1 brown onion
2 carrots
100g korma curry paste
1 1/2 cup basmati rice
2 cube vegetable stock
3 cups hot water
1 bunch coriander
1/2 cup roasted almonds
4 tbsp currants
Greek yoghurt

How to make:
1. Get Prepped. Preheat the oven to 180. Chop the cauliflower into 2cm florets. Finely slice the brown onion. Slice the carrot unpeeled because all of the good stuff is in the skin -- slice the carrot into 5mm thick disc.
2. Roast the cauliflower. In a bowl, toss the cauliflower with a drizzle of olive oil and season with salt and pepper. Place the cauliflower on the oven tray lined with baking paper and cook in the oven for 25 minutes or until tender and golden brown around the edges.
3. Cook the onion and curry paste. Heat a drizzle of olive oil in a deep medium frying pan over a medium high heat. Add the brown onion and the carrot and cook, stirring for 5 minutes or until soft. Add the curry paste and cook, stirring for 1 minute or until your kitchen smells so good.
4. Add the rice. Add the basmati rice to the pan with the onion and stir to coat in the paste. In a jug, combine the vegetable stock (check the ingredient list for the hot water). Stir to dissolve the stock cube, then add to the pan with the rice and bring to a boil. Cover, reduce heat to medium low and simmer for 15 minutes or until the water is absorbed and the rice is soft.
5. Finish the biryani. Roughly chop the coriander leaves. Roughly chop the roasted almonds. When the rice is soft, remove the lid and stir in the almonds, currants, roasted cauliflower and coriander.
6. Serve up! Divide the cauliflower biryani in bowls, top it off with a huge dollop of greek yoghurt.

*If you're not fond of coriander mixed through your food, you can just add it on top with your yogurt.

This sounds good but I am wondering if there is a vegetable that could be used instead of Cauliflower? Cauliflower is a hit or miss veggie with me and I would hate to go to all the trouble of making this and then disliking it simply because of the cauliflower.

You could use Sweet Potato! Or Pumpkin or Butternut Pumpkin.
