Warm Weather Favorites! - April 29th 2011, 02:27 AM

As the spring months continue and the summer months approach, the weather is getting warmer and I begin craving recipes (both food and drinks) that are light and refreshing.
We know the typical - ice cream treats, salads, burgers and hot dogs on the grill, etc.


I'll give one of my favorites which a friend of mine shared with me at the beach:
Low fat fruit "milkshakes." She's been dieting so instead of the typical ice cream shakes, this is one that she came up with:

1/2 or 1 cup low fat/skim milk (depending on thickness preference)
1 banana (you can use other fruits and change the ratios depending on how fruity you like it!)
2-3 packets of sweet and low
Ice

Throw it all in (we used a Magic Bullet blender) and blend it until it's the perfect consistency, then drink and enjoy! It's definitely cheaper than buying ice cream (especially if you get fruit that's in season or on sale) and it's a LOT better for you.

1 package of Grands Flaky Layers biscuits
2 pounds of fresh strawberries, cut (2 pounds feeds 4-6)
Sugar (you can eyeball this)
More sugar (in a bowl)
Amaretto (optional!)
Whipped cream

Cut strawberries (I usually cut each one into 4 pieces) and place in a large bowl. Pour some sugar in and mix together (start with a little bit and add more as necessary). Pour in 1-2 shots of amaretto (almond liqueur). Cover the bowl and place in refrigerator. Allow them to sit and create their own juice/syrup.
When ready to serve, roll biscuits in bowl of sugar until all are lightly coated. Then, bake in the oven according to package directions.
To serve: Split rolls in half while warm and pour strawberries and syrup over top. Top with whipped cream (we use the Reddi Wip original).

EDIT: Since strawberry shortcake was edited in to the OP, I'll also add that warm weather reminds me of fair food... corn dogs and funnel cakes to be exact!

I know this seems obvious but water. A nice icy cold glass of sparkling water. Nothing better on a hot day to me.

Wow all these mouth watering pictures.

I can't really think of anything too exciting, but for me fresh peaches, peas in a pod, and pickling cucumbers I love on a warm day.
I don't mean I enjoy pickling cucumbers. It's what they're called. They're a smaller cucumber.....for pickling, but I like to cut them in half and sprinkle salt on them lol.

To me, summer means one thing: sea salt ice cream. <3 It's the perfect combo of salty and sweet. :3
