easy options - May 16th 2011, 10:59 PM

heya,
just wondered if anyone had some easy meal ideas for one that arent very expensive, but are also healthy. u have type 1 diabetes, but can generally eat what i want as i take my medication for how many carbs i eat. just getting sick of eating the same things, and need a bit of inspiration i'm not very fussy, so all ideas welcome

If you're able to count out and measure the carbohydrates clearly, pasta is a great option. The great thing about it is that it can be cooked in about ten minutes, and if you want "decoration" on it (such as cheese, marinara or other sauces), that only takes two or three minutes more. Just be sure you check the sugar and carb counts on any ingredients.

I definitely agree with the pasta idea, there's so many options with all the different sauces available.
Also, salads are pretty easy to prepare so you could make different types of those.
