Peeled and diced in inch sized pieces:
1/2 a Butternut Pumpkin
1/2 a Sweet Potato
3 Potatoes
4 Peeled Carrots cut in 1cm slices
5 Celery Stalks (20cm) cut in 5mm
1 Swede cut into 1cm cubes
1/4 Cabbage, shredded thinly
1 Litre of Chicken stock (To make get a chicken carcass or about 8 thigh bones and simmer in water for 3 hours) you can also use a pre-made stock or veggie stock.
Method
Melt butter and fry garlic and onions until translucent.
add cabbage and chicken stock and simmer until cabbage has sweated down. (About 15 min)
add all other veggies except potato and enough water to nearly cover them all.
simmer until pumpkin is soft (20-30 min) and add potatoes then continue to simmer gently until potatoes are soft. (20 min)
Optional: Add a can or two of diced tomatoes if you like that sort of thing.
You can use any veggies that are forgiving when cooked for long periods of time such as parsnip, zucchini or beans.

Hey LittleMiss your soup recipe is awesome dear. I really like it dear. Thanks for sharing this recipe. I never tried it but now i will try to make it at home. This recipe is new for me but i hope it is a healthy recipe. Keep sharing.

It is a healthy recipe, you can make it more healthy by using 1 Tbs of olive oil instead of the butter for frying.
Also, if you want to cut down on salt (because more stock powders or store-bought stocks), make your own stock. To make a vegetable stock, there is a great recipe here!
If you're living on your own you can freeze it in single servings for later
