does anyone have any recipes involving pumpkin? preferably something sweet
i've actually never tried pumpkin, so what are people's thoughts on it?

Pumpkin soup is a good thing to make!

Ingredients

1 x 4kg/8lb 13oz Pumpkin
125g/40z Butter
2 medium onions, peeled, finely chopped
1 cinnamon stick
freshly grated nutmeg
salt and freshly ground black pepper
1.7 litres/3 pints chicken stock (vegetarians may substitute vegetable stock)
There was the option of 3 table spoons of sherry, but when I made this recipe it wasn't really needed.

For the prep. method (if you choose to make this recipe) feel free to use the original source I received it from. I have made this recipe though, and it's really delicious.

I've always loved desserts with pumpkin, such as pumpkin pie and pumpkin cupcakes. The great thing about pumpkin is it tastes good in a lot of different foods.

I can't cook at all. Hahahaha

But I can recommend coffee! It's my life. Try the Pumpkin Spice Latte at Starbucks if you're a coffee lover. They also have pumpkin flavored doughnuts at Dunkin Doughnuts, along with Pumpkin Coffee frappes. So...there's my unhealthy restaurant recommendations!

Pumpkin pie, on the back of the Libby's can is pretty good IMO. I always tweak/increase the pumpkin spice and add a bit of brown sugar. Usually I use nutmeg, allspice, cloves, and cinnamon for my pumpkin spice.

Pumpkin cheesecake is wonderful. Check allrecipes.com and sort by rating, there's a couple good ones. The key to making a good one is this: buy a cheap springform pan or use a disposable pie pan that can be cut away. Put said springform in a turkey bag because it will leak water. Place the wrapped pan into the deepest 13x9 you have, filled with warm water. This will insulate the edges of the cheesecake and make it cook more uniformly. Prepare the cheesecake, ideally with oreo or graham crust, and bake for about an hour on whatever temperature they say. Always make more crust than they tell you to. The cheesecake is "done" or "set" when the edges are firm and the center jiggles a bit, like jello. Let it cool in the turned-off oven for about an hour, then refrigerate. Om nom nom nom will commence.

EDIT: you don't really need the springform if you don't mind eating cheesecake out of the pan instead of serving it on a platter. Just use an 8 or 9 inch round
