I am on a gluten-free diet and for some reason milk bothers me but not cheese.
Anyway, I make a lot of really plain dishes. A meat, two veggies, and a corn bread or some sort of potato. I cook for picky kids... I have this really cool book that is a lot of gluten and casein (dairy) free cookbook. It also has listed on each dish whether or not it has soy in it and it's pretty easy to just substitute. It's called "The Kid-Friendly ADHD and Autism cookbook" Ignore the name, it has a lot of bread options and desserts, as well as a pizza crust that is awesome, and some other main dishes. So far everything I've made out of it turned out pretty good. A favorite dish of mine is chicken fajitas. I get some chicken breasts and bake it. After it's baked I chop it up and put it on the stove in a pan in about a 1/4 inch of water and add chopped up bell peppers, onions, and sprinkle in some fajita seasoning. I let it fry until it's a little brown, you have to make sure you stir it or it will burn. I make some refried beans to go with it and eat it alone or put it on a corn taco shell or corn tortilla. We were made to be courageous. The kind we get has: Onion, garlic, ginger, paprika, jalapeno pepper, oregano, mustard, cumin, red pepper, parsley
We had to find an "all natural" kind. If you get just the plain ol' MCCormick stuff it has soy sauce in it, which of course has wheat in it. We were made to be courageous. I'm gluten intolerant and I switch out pasta for gluten free pasta. Or use gluten free flour when making things like bread. They taste a bit different, but you can do some quite normal meals, like pasta and tomato sauce, or a sandwich.
