In my personal opinion it comes down to your imagination. Though there technically is an 'end game', aka to defeat the Ender Dragon found in the world known as The End, many people use Minecraft for creative reasons. Whenever you google Minecraft and look at either videos or images of the game, people often enjoy showing off their greatest creations. Some people play the game because they enjoy creating things or working towards the defeat of the Ender Dragon with their friends.

Whenever I play, I have a total of 74 mods installed and I spend my time making lavish underground facilities using the various mods like IndustrialCraft or BuildCraft as they're fun to make automated contraptions with and so on.

Overall I think the point of the game is left to the player's imagination.

Minecraft is like virtual Legos and it can be boring if you don't use your imagination. Maybe you could look up different builds on YouTube to get an example and some inspiration? Some people have built entire cities, towns and amazing houses along with interesting mechanisms like elevators and such. There's a lot to do. You can make houses with your own personal touch, start a village, collect all the animals, create a room for organizing things you find. You could also carry empty maps with you and explore the world to fill in the blank maps. Mining is also fun and it can be very time-consuming. If you explore the world, I suggest exploring any cave you run up on.

Mainly, the game is left up to the player's imagination. To build whatever you think of, to decorate it how you like until it's completely personalized. There's endless possibilities. Maybe you could experiment in building different houses to try out different designs till you find a look you like.

Theres minecraft books too. if you want to watch minecraft vidoes I suggest looking up the videos made by stampylonghead/stampylongnose.
