Tell her honestly, she'll appreciate it more, plus most lies are rather transparent.
I'd say something along the lines of, "I'm sorry, but sometimes I just need a little time to myself, it's not that I don't love talking to you, but we spend a lot of time together, and I could do with some me time, will you be ok with that?" At least, I know I'd be fine being told that, and plus, truth is better than lies.
