I definitely recommend potatoes are best roasted in goose fat. It can be bought reasonably cheaply by the jar, and is a must when roasting chicken or turkey. Olive oil has always been the preferred fat in Provence, but it doesn't impart anywhere near the same flavour as goose fat.

Incidentally, regarding beef, that is best roasted in beef dripping, but the browned bits that have set on the bottom of the dripping bowl are absolutely delicious scooped out and spread on toast! It's another comfort food.
