How to make bird’s nest cupcakes

Easter is usually a highlight for many as it is typically spent with friends and family. The COVID-19 quarantine will make for a different experience this year. If you’re home, have the ingredients in your pantry, and you’re looking for something to do, try making these cupcakes.

You will need the following:
  • Cupcake/cake mix of your choice
  • Ingredients to add to cake mix as per instructions on the box
  • Frosting
  • Green food coloring
  • Shredded coconut, little pretzels or edible Easter basket grass
  • Easter egg candy (Cadbury mini eggs are perfect, but jelly beans and other egg shaped candy works well!)

Bake your cupcakes by following the instructions on the box. Alternatively, make a cake if you prefer. Allow the cupcakes or cake to cool. If you don’t want to wait for it to cool, pop it in the fridge for a few minutes.

Frost the cake or cupcakes as you normally would. If you are using the coconut, add some to a bowl. Add a drop or two of green food coloring and mix well. Line the outside of your cake or cupcakes with the coconut to make the outer edges of a nest. You can also line the edge with edible Easter basket grass, or little pretzel rods. If using pretzels, break them into smaller pieces and then put them into the frosting.

Add about three candy eggs to the center of the cupcake; add more if you’re decorating an entire cake. You can get creative with the type of candy you choose to use - it can be more then just eggs!

Share them with the people around you, or save them for yourself. These bird’s nest cakes are a good way to release creativity and they serve as a distraction as well.
